One that I used to love when I was younger is the stuffed vegetable; a nice wide variety can be used which makes it easy to alter. I usually use regular beef mince to make the stuffing mixture however I have decided to create a healthier option and use Steggles chicken mince instead. This is because it is a lean source of protein, has the heart tick of approval and is made from nothing but a blend of chicken breast and thigh. Below is my recipe for stuffed vegetables; tomato and capsicum specific but it can be easily adjusted to suit you personal taste. Chicken and Rice Stuffed Vegetables

Chicken and rice stuffed vegetables

Ingredients:

500g Steggles chicken mince
1x cup cooked rice
1x onion (diced)
4x bacon rashers (sliced)
1x tbs garlic
1x tbs mixed herbs
salt and pepper
Vegetables of choice – (I used 12x tomatoes and 5x capsicum)
Fetta (Persian is my favourite)
200g tomato paste

Instructions:

1. Preheat oven to 180°c.
2. Heat up small amount of oil in pan and fry chicken mince, onion, bacon and garlic over medium heat.
3. Slice tops off tomatoes and empty all juices and seeds into mince mix (so there is minimum wastage).
4. Add rice and season vegetables and mince mix. (If using tomatoes add a teaspoon of sugar to mix so they don’t go bitter).
5. Fill vegetables with mix and top with crumbled fetta.
6. Bake in oven for approx 30-40 minutes.
7. ENJOY!

Left over mince mix can be made into pie or pastry parcels.

My coconut chicken recipe is budget friendly and requires only 6 ingredients (you could even use less than that if you really wanted). Over the many years I have spent in the hospitality industry  as a chef I have learnt how to create meals that require the minimal effort, are cost effective and are full of flavour. I want to share some of these recipes with you, so you too can enjoy eating delicious restaurant quality foods at home, while sticking to your budget.
From fridge to table in under 20 minutes!
Thai Coconut Chicken recipe

Thai Coconut Chicken on Rice

Serves 4

Ingredients
500g x chicken (sliced)
1x onion (diced)
½ tube x Gourmet Gardens Thai seasoning
(Lemon grass, ginger, coriander, chilli)
600ml x Coconut cream
2x tbs sweet chilli sauce
Salt and Pepper to taste
Rice
 Method
1.    Cook rice.
2. Brown chicken (so it stays juicy) and add in onion.
3. Add Thai seasoning and stir through.
4.  Mix in coconut cream.
5.  Cook chicken in coconut cream.
6.  Reduce cream.
7.  Add in sweet chilli sauce.
8. Season to taste.
9. Serve on rice and enjoy!
I serve this with fresh coriander and green beans or Asian greens on the side but it is not essential.

Today I thought I’d share with you all an absolute favourite recipe (even the fuss pot kids LOVE it)
This is not only delicious but it is also extremely quick and thrifty to make as you can change up the ingredients to suit what you have in the fridge.

This is also good if the kids want to help with the pastry – let them cut out shapes and put them on top (as seen in pic below). My boys love helping with dinner (sometimes I don’t love it as much as them – they make it a lot messier and time consuming) however it makes it worth it when they see the finished product and know they helped, the big smiles and the fact they will actually eat it makes a huge difference!

Bacon, Chicken and Mushroom Pie Recipe

Ingredients
1 1/2 cups of small cooked (diced) chicken
4 bacon rashors
1 1/2 (sliced) mushrooms
1 onion (diced)
2 tbs butter
1 1/2 tsp minced garlic
1 tbs plain flour
3/4 cup milk
1/4 cup cream
1/2 tsp mixed herbs
Pinch nutmeg (tastes fine without it)
2 tbs oil
Puff pastry
1 egg
METHOD
1. Cook chicken and then set aside in mixing bowl.
2. Melt half of the butter in fry pan and add onion, bacon and mushroom. Cook until soft then add to bowl with chicken. Add herbs and mix through.
3. Add remaining butter to empty frypan and melt. Add flour (stirring until it combines) then slowly stir in milk and cream over low heat until it thickens.
4. Add sauce to the chicken mix and combine. Let cool.
5. Preheat oven to 180°C.
6. Cut pastry to make large pie or individual pies (stab pastry with fork a few times, so it doesn’t go soggy)
7. Fill with chicken mix and cover with pastry.
8. Brush with lightly beaten egg and bake until pastry turns golden brown.
