]]>Zucchini Slice Recipe. There are so many to choose from but this recipe is such a simple one to make that even the most kitchen challenged person could make it. It is absolutely delicious and as an added bonus it hides all the vegetables from fussy eaters!!
It can be easily altered to add shallots, herbs, etc. however it is tasty enough on its own.
Zucchini Slice Recipe
Ingredients
1 cup self raising flour (sifted)
5 eggs
1 zucchini (grated)
1 carrot (grated)
4 middle rashers bacon (chopped)
1 onion (diced)
1 cup grated cheese
60ml vegetable oil
Method
1. Preheat oven to 170°C.
2. Add eggs to flour and beat until smooth and well mixed.
3. Add zucchini, carrot, bacon, onion, oil and cheese to mix.
4. Stir until combined.
5. Pour into baking tray/pan and bake in oven for 30 minutes or until cooked.

]]>Looking for something citrus, sweet and delicious? Do you have an abundance of extra lemons or even just 2? Well the lemon cake recipe below is a must try and you will make it over and over because it is so tasty, flavoursome and moreish. In case being mouth-watering isn’t a good enough reason for you, they are also incredibly easy to make.
Lemon Cake Recipe
Serves 8
Ingredients
125g butter, softened
1 cup castor sugar
1.5 lemons, rind finely grated, juiced
2 eggs
1.5 cups Self Raising Flour, sifted
¼ cup milk
¼ cup lemon juice
ICING– 1 cup icing sugar
1 tablespoon lemon juice
(If more liquid is needed add a tad more)
(If more liquid is needed add a tad more)
Method
1. Preheat oven to 180 degrees (160 fan forced)
2. Cream butter, castor sugar and lemon rind with an electric beater until light and fluffy.
3. Add each egg one at a time; beating well after each to mix in well.
4. Add half the flour and the milk to the egg mix and combine. Fold in the remaining flour and ¼ cup lemon juice.
5. Spoon mixture into greased loaf pan, mini loafs, muffin trays, etc.
6. Bake for 20-25 mins or until skewer comes out clean when inserted into the centre of cakes.
7. Turn out onto cooling rack after 5 minutes.
8. To prepare icing mix the icing sugar with lemon juice.
9. Spoon onto the lemon cake/loaf while still warm.
10. Add some extra thinly grated rind on top of icing for decoration.

]]>Pancake Bites Recipe. I love that this pancake bites recipe because it is so versatile and delicious. You can use the base recipe and simply alter the ingredients for sweet or savoury by adding bacon, fruit, chocolate chip, nuts, the possibilities are endless!! It is perfect for breakfast, morning tea, lunch, after school snack or even for dessert. They will be a winner with the kids because they are so tasty and a winner for mum because they are so quick and easy to make.
Pancake Bites Recipe
Ingredients
1 cup flour
1 cup milk
1 egg
1 cap full vanilla essence
1/3 cup chocolate chips
Method
1. Sift flour into bowl.
2. Add all other ingredients into bowl (leave out chocolate chips) and whisk out the lumps.
3. Pour into muffin tins and add chocolate chips.
4. Bake at 180 degrees for 12 minutes.
You could add nuts, fruit, bacon and cheese, etc.
Enjoy these by themselves, with yoghurt, fresh fruit or ice cream!!

]]> This chocolate and cocnut slice is so chocolatey and so delicious! Plus it is extremely quick and easy to make.
Chocolate and Coconut Slice Recipe
Ingredients
1 cup Self Raising Flour
3 WheatBix Biscuits
1 cup desiccated Coconut
½ cup Castor sugar
2 capfuls of vanilla essence
2 tbs cocoa
150g butter
1.5 cups icing sugar
1 extra tbs cocoa
5 tsp hot water
Method
1. Preheat oven to 180°c
2. Line slice tray
3. In a bowl – crush wheatbix up. Add sugar and coconut.
4. Sift in flour and cocoa. Stir well
5. Melt the butter over low heat.
6. Pour over the dry ingredients, add vanilla and mix well.
7. Press into baking tray – firm and level.
8. Bake for 10 minutes (fan forced) or 15 minutes normal.
9. Sift icing sugar and cocoa into bowl.
10. Add hot water and stir.
11. Ice the slice while still hot.

This recipe is so easy to make and results in scrumptious moist banana read.

Easy Moist Banana Bread Recipe
INGREDIENTS
1 ¾ cups Self Raising Flour
¼ cup Plain Flour
2/3 cup brown sugar (firmly packed)
1 tsp ground cinnamon
½ cup milk
2 eggs
60g butter (melt and cool)
1 ½ caps of vanilla essence
3 over-ripe bananas (mashed)
METHOD
1. Preheat oven to 180°c
2. Grease loaf tray and line with grease proof paper (allow it to overhang) & 6 muffin tray
3. Sift flour (both variants) and cinnamon into a large bowl
4. Add sugar and mix
5. In a separate bowl mash bananas
6. Add to the bananas – milk, eggs, vanilla essence and butter. Stir until well combined
7. Make a well in the flour mix
8. Add banana mix to flour and mix until just combined
9. Spoon into loaf (approx. 3/4 full), smooth top and fill muffin trays
10. Bake loaf for approx. 30mins
11. Bake muffins for approx. 15mins
12. Check with skewer to ensure it’s cooked. (Will be removed clean if cooked)
13. Remove from oven and cool in trays for 5 minutes
14. Turn onto wire rack and cool completely

]]>This is one recipe that you will make over and over again. It is easy, quick and tastes absolutely delicious. Great for morning/afternoon tea, brunch, after school snack, etc. I often use these when I make cookie and ice cream stacks.
Chocolate Chip Cookies Recipe
INGREDIENTS
125g butter
1 egg
½ cup caster sugar
½ cup brown sugar
¼ tsp salt
1 tsp vanilla essence
1 ¾ cups self raising flour
200g chocolate chips
METHOD
1. Preheat oven to 180°c.
2. Line trays with baking paper.
3. In a large bowl cream the butter, caster sugar, brown sugar and vanilla essence.
4. Add egg, sifted flour and salt. Mix together well.
5. Mix in chocolate chips
6. Roll into desired sized balls (I go about a teaspoon size) and put on the trays. Make sure you leave space for them to expand.
7. Bake for 9 minutes if you want nice soft doughy chocolate chip cookies or 12 minutes if you want crunchier cookies.
8. Leave on tray for a few minutes before transferring them to wire rack.
