This Tomato, Bacon and Basil Soup recipe is so quick and easy to make. Best of all it tastes delicious while being extremely budget friendly!
Let me just say that my youngest loathes tomato and I mean to the point of he will find/taste the tiniest piece hiding and pull/spit it out. He loved this soup!!

 

*It can be made with canned tomato (whole peeled, crushed, pureed, etc) or fresh peeled tomato. Both taste as good as each other!

Tomato, Bacon and Basil Soup Recipe with Garlic Ciabatta

Tomato, Bacon and Basil Soup recipe
 Serves 6
 Ingredients
*3x 400g canned tomato or 2kg fresh peeled tomato
1x onion roughly chopped
4x bacon rashers roughly chopped
1x tsp garlic
2x tsp Gourmet Gardens basil
1-1.5x cups of water
1x tsp sugar (prevents the tomato going bitter)
Salt and Pepper to taste
Ciabatta: butter, garlic, ciabatta bread

 

Method
 1.    Roughly chop bacon and garlic and fry.
2.    Preheat oven to 200 degrees (for ciabatta).
3.    Add garlic and basil, stir through. C
4.    Cook off until the aroma is strong.
5.    Add tomato and heat on low-medium. Stirring.
6.    Add sugar and season to taste.
7.    Let simmer on low for 10 mins.
8.    Mix garlic and butter and spread onto ciabatta bread.
9.    Place in oven, turn once when required.
10.Blend ingredients.
11.Serve with delicious ciabatta.

 

**This can be made creamy by adding approx. ¼ cup of cream during the simmer stage.

 We are all busy these days and it is always good to have some quick meals as a back up. My chilli and chorizo fettuccine recipe is quick, easy and budget friendly.
Prepared, cooked and on the table in under 20 minutes!

Chilli and Chorizo Fettuccine Recipe

Serves 4
Ingredients
3x chorizo sausages
1x small onion
1x tbs chunky garlic
1.5x tbs basil
1 tsp – 1 tbs x chilli (depending on how spicy you like it!)
400g fettuccine
1x jar of Dolmio pasta sauce (you can make the Nap sauce if you prefer)
1x tsp sugar (this prevents the sauce going bitter)

 

Method
1.  Boil water for pasta.
2.  Dice onion, slice chorizo and fry.
3.  Add fettuccine to water only when it is boiling.
4.  Add garlic, basil and chilli to chorizo and onion.
5.  Cook it off, you will smell amazing aromas as they entwine.
6.  Drain fettuccine when cooked.
7.  Add sauce to pan and stir gently until hot.
8.  Mix in sugar.
9.  Stir fettuccine through.
10. Serve to your grateful family with Parmesan cheese.
11. Leave the dishes for someone else!

Creamy Bacon Basil Gnocchi Recipe

Serves 4 

Ingredients
500g packet of gnocchi
4x rashers bacon (roughly sliced)
1x medium sized onion (diced)
1x tsp chunky garlic
1.5x tsp basil
125ml cream
Salt and Pepper
Sprinkle of Parmesan cheese top finish

 

Method

1.       Boil slightly salted water for gnocchi.
2.       Dice onion, slice bacon and fry.
3.       Add gnocchi to water only when it is boiling.
4.       Add garlic to bacon and onion and cook off.
5.       Add cream and basil to pan and stir.
6.       Reduce cream slightly.
7.       Drain gnocchi and add to cream.
8.       Mix to coat gnocchi with the sauce.
9.       Season to taste.
10.    Serve and add shaved Parmesan cheese if desired.

 

Gnocchi can be made fresh but the packet works well and I lack the time!
