In an effort to introduce some more exciting meals to our dinner table we have been playing around with some old classics. One that I used to love when I was younger is the stuffed vegetable; a nice wide variety can be used which makes it easy to alter. I usually use regular beef mince to make the stuffing mixture however I have decided to create a healthier option and use Steggles chicken mince instead. This is because it is a lean source of protein, has the heart tick of approval and is made from nothing but a blend of chicken breast and thigh. Below is my recipe for stuffed vegetables; tomato and capsicum specific but it can be easily adjusted to suit you personal taste. If you want more ideas on how you can add chicken mince to your meals click here for some delicious ideas.

Chicken and Rice Stuffed Vegetables

Chicken and rice stuffed vegetables

Ingredients:

500g Steggles chicken mince
1x cup cooked rice
1x onion (diced)
4x bacon rashers (sliced)
1x tbs garlic
1x tbs mixed herbs
salt and pepper
Vegetables of choice – (I used 12x tomatoes and 5x capsicum)
Fetta (Persian is my favourite)
200g tomato paste

Instructions:

1. Preheat oven to 180°c.
2. Heat up small amount of oil in pan and fry chicken mince, onion, bacon and garlic over medium heat.
3. Slice tops off tomatoes and empty all juices and seeds into mince mix (so there is minimum wastage).
4. Add rice and season vegetables and mince mix. (If using tomatoes add a teaspoon of sugar to mix so they don’t go bitter).
5. Fill vegetables with mix and top with crumbled fetta.
6. Bake in oven for approx 30-40 minutes.
7. ENJOY!

Left over mince mix can be made into pie or pastry parcels.

I have said this time and time again; everything has changed so much in the baby department in terms of selections and availability. While it has only been 4 years since my previous baby it seems that so much has evolved and changed directions. Baby food for example has expanded and the options that are now available are incredible.

Gone are the days of having preservative filled jars or having to make meals from scratch to give your baby the best quality food. You can now purchase readily made organic meals! Ella’s Kitchen is one of the wonderful brands that cater to parents who only want the best for their children. Ella’s Kitchen was actually created by Ella’s dad, Paul Lindley who was so passionate in his belief that his daughter along with every other child should have the opportunity to eat healthy; and so Ella’s Kitchen was born. I love that I can walk into my pantry and choose from a large selection of meals and textures in conveniently portioned squeeze tubes and know that my 6 month old is getting nothing but the best. Nothing but 100% organic, nothing but real food and most importantly nothing but great flavours! Ella’s Kitchen pride themselves on the fact that there is no added sugar, salt or water, no additives or thickeners, no GM, no gluten, wheat, dairy or lactose, no lumps or bits and nothing artificial in their products.

I will be honest and say that some of the meals I was a little unsure of flavour wise like the spinach, apple and swedes for example however Ella’s dad knows what little ones like because Hadley absolutely loved it!! She loved it so much that the spoon wasn’t fast enough for her and she ended up eating straight from the squeeze pouch. There are 7 flavours available in stage 1 (from 4 months) and 2 breakfast pouches for 6 months. Each and every flavour is unique, tasty and full of absolute goodness!! Ella’s kitchen (stage 1) is available at Coles for only $1.99 and in my eyes this is incredible value for money. We get approx. 3 feeds per pouch of this healthy natural baby food.

For your chance to try these for the first time or stock up on your babies’ favourite food enter the giveaway below. Prize contains: 1x upcycled lunch bag, Ella’s Kitchen bib and a selection of Ella’s Kitchen pouches (total value approx. $50).
