I’m a baker – Well close enough

We all have occasions where we need ‘that’ special cake but most of us don’t think we have the ability to make it ourselves without it looking like a disaster or we have to fork out budget breaking amounts of money to get a bakery or cake maker to create the desired work of art.

That is until the wonderful and amazing baker girls over at Cake 2 the Rescue. They have put together a fantastic and such an original website that caters to everyone in need of a cake. Every occasion is covered and there are so many designs and styles available. These girls have produced a fool proof way for the everyday man and woman to create a masterpiece for their special events. With step by step instructions and everything you need from the baking tray, rolling pin to the icing and finishing touches delivered to your door it doesn’t get much better than this.

 

Words cannot say how highly I speak of these wonderful packages and the very helpful ladies over there. As you can see this is the rocket cake I made with my kids and as you can imagine I was the most awesome person in the world after this – oh yeah and most importantly they are delicious!!

Lemon Cake {Recipe}

Looking for something citrus, sweet and delicious? Do you have an abundance of extra lemons or even just 2? Well the lemon cake recipe below is a must try and you will make it over and over because it is so tasty, flavoursome and moreish. In case being mouth-watering isn’t a good enough reason for you, they are also incredibly easy to make.

Lemon Cake Recipe

Serves 8
Ingredients
125g butter, softened
1 cup castor sugar
1.5 lemons, rind finely grated, juiced
2 eggs
1.5 cups Self Raising Flour, sifted
¼ cup milk
¼ cup lemon juice
ICING– 1 cup icing sugar
1 tablespoon lemon juice
(If more liquid is needed add a tad more)

 

Method

1.    Preheat oven to 180 degrees (160 fan forced)
2.    Cream butter, castor sugar and lemon rind with an electric beater until light and fluffy.
3.    Add each egg one at a time; beating well after each to mix in well.
4.    Add half the flour and the milk to the egg mix and combine. Fold in the remaining flour and ¼ cup lemon juice.
5.    Spoon mixture into greased loaf pan, mini loafs, muffin trays, etc.
6.    Bake for 20-25 mins or until skewer comes out clean when inserted into the centre of cakes.
7.    Turn out onto cooling rack after 5 minutes.
8.    To prepare icing mix the icing sugar with lemon juice.
9.    Spoon onto the lemon cake/loaf while still warm.
10.           Add some extra thinly grated rind on top of icing for decoration.

Easy Moist Banana Bread Recipe

Easy Moist banana bread recipe. If you are looking for a simple and yet delicious moist banana bread recipe, than you have found it!

 

This recipe is so easy to make and results in scrumptious moist banana read.
The BEST if I don’t say so myself!!

Easy Moist Banana Bread Recipe

INGREDIENTS
1 ¾ cups Self Raising Flour
¼ cup Plain Flour
2/3 cup brown sugar (firmly packed)
1 tsp ground cinnamon
½ cup milk
2 eggs
60g butter (melt and cool)
1 ½ caps of vanilla essence
3 over-ripe bananas (mashed)

 

METHOD
1.     Preheat oven to 180°c
2.     Grease loaf tray and line with grease proof paper (allow it to overhang) & 6 muffin tray
3.     Sift flour (both variants) and cinnamon into a large bowl
4.     Add sugar and mix
5.     In a separate bowl mash bananas
6.     Add to the bananas – milk, eggs, vanilla essence and butter. Stir until well combined
7.     Make a well in the flour mix
8.     Add banana mix to flour and mix until just combined
9.     Spoon into loaf (approx. 3/4 full), smooth top and fill muffin trays
10.  Bake loaf for approx. 30mins
11.   Bake muffins for approx. 15mins
12.   Check with skewer to ensure it’s cooked. (Will be removed clean if cooked)
13.  Remove from oven and cool in trays for 5 minutes
14.   Turn onto wire rack and cool completely
