Bacon Stuffed Potato Skins {Recipe}

This stuffed potato skins recipe can be made as a main meal, side dish or entrée/starter. Just adjust the quantity to suit.

Bacon stuffed potato skins

Ingredients:

4x Med-large potatoes
2x Bacon rashers (approx. half per potato)
1 tbs x Sour cream
1.5 tbs x Butter/margarine
2-3 tbs x Cream (depending on your taste)
A sprinkle of mozzarella cheese
Salt and pepper to taste
Optional – additional sour cream for presentation
Shallots

Method:

1. Preheat oven to 180˚.
2. Cut potatoes in half with flatter sides to be used as bases.
3. Brush with oil and bake for approx. 30 minutes or until cooked. (I microwave mine for roughly 10 minutes and they are usually cooked right through)
4. Once cooked scoop out centre of potato (put this into a bowl as we will use this for the filling) and leave just a thin amount of potato on the skin. Put skins back in the oven to crisp up. This takes approx. 20 minutes.
4. While potatoes are cooking, dice bacon and fry off.
5. Add bacon to bowl of potato centres. Add the butter, sour cream, cream, salt and pepper. Mash together.
6. Remove the skins from the oven and fill with mash mix. Top with a sprinkle of cheese and place back into oven until cheese has melted and browned slightly.
7. Add a little sour cream and shallots prior to serving.

Zucchini Slice Recipe – Easy and Delicious

Zucchini Slice Recipe. There are so many to choose from but this recipe is such a simple one to make that even the most kitchen challenged person could make it. It is absolutely delicious and as an added bonus it hides all the vegetables from fussy eaters!!
It can be easily altered to add shallots, herbs, etc. however it is tasty enough on its own.

Zucchini Slice Recipe

Ingredients
1 cup self raising flour (sifted)
5 eggs
1 zucchini (grated)
1 carrot (grated)
4 middle rashers bacon (chopped)
1 onion (diced)
1 cup grated cheese
60ml vegetable oil
Method
1.    Preheat oven to 170°C.
2.    Add eggs to flour and beat until smooth and well mixed.
3.    Add zucchini, carrot, bacon, onion, oil and cheese to mix.
4.    Stir until combined.
5.    Pour into baking tray/pan and bake in oven for 30 minutes or until cooked.

Garlic Herb Meatballs with Sundried Tomato Couscous

Garlic Herb Meatballs with Sundried Tomato Couscous. This garlic herb meatball recipe is full of flavour and will make the most ordinary cook look like they know what they are doing. 

Garlic Herb Meatballs on Sundried Tomato Couscous

Ingredients
1 onion – diced (½ for mince & ½ for the couscous)
500g mince
5 bacon rashers – thinly sliced (½ for mince & ½ for sauce)
Fresh herbs *thyme, rosemary, etc – finely chopped. Enough to your liking. Dried mixed herbs work just as well.
1 tbs minced garlic
2 eggs
Breadcrumbs – just enough to make the mince mix hold together.
Sundried tomatoes – finely sliced
2 cups couscous
500ml chicken stock
Tomato pasta sauce – homemade or jar is fine. We use Dolmio Basil
1 tsp sugar – *this prevents tomato based meals from going bitter!
1tbs butter
Salt and pepper – to taste
Method
Meatballs & Sauce
1.    Add mince, onion, herbs, bacon, garlic and eggs into a bowl.
2.     Mix together and add breadcrumbs to combine.
3.    Roll them into desired size balls.
4.    Brown off the balls in a pan, add the rest of the bacon, sauce and sugar.
5.    Turn down to a simmer.
6.    Add a little water to sauce to thin it out a little.
Couscous
Add 2 cups chicken stock into pot and bring to the boil.
1.    Remove from heat – add the couscous, onion, sundried tomatoes to the stock.
2.    Cover and stand for 3 minutes.
3.    Add 1 tbs butter and heat on low for a further 3 minutes whilst stirring.

Lemon Cake {Recipe}

Looking for something citrus, sweet and delicious? Do you have an abundance of extra lemons or even just 2? Well the lemon cake recipe below is a must try and you will make it over and over because it is so tasty, flavoursome and moreish. In case being mouth-watering isn’t a good enough reason for you, they are also incredibly easy to make.

Lemon Cake Recipe

Serves 8
Ingredients
125g butter, softened
1 cup castor sugar
1.5 lemons, rind finely grated, juiced
2 eggs
1.5 cups Self Raising Flour, sifted
¼ cup milk
¼ cup lemon juice
ICING– 1 cup icing sugar
1 tablespoon lemon juice
(If more liquid is needed add a tad more)

 

Method

1.    Preheat oven to 180 degrees (160 fan forced)
2.    Cream butter, castor sugar and lemon rind with an electric beater until light and fluffy.
3.    Add each egg one at a time; beating well after each to mix in well.
4.    Add half the flour and the milk to the egg mix and combine. Fold in the remaining flour and ¼ cup lemon juice.
5.    Spoon mixture into greased loaf pan, mini loafs, muffin trays, etc.
6.    Bake for 20-25 mins or until skewer comes out clean when inserted into the centre of cakes.
7.    Turn out onto cooling rack after 5 minutes.
8.    To prepare icing mix the icing sugar with lemon juice.
9.    Spoon onto the lemon cake/loaf while still warm.
10.           Add some extra thinly grated rind on top of icing for decoration.

Italian Beef Pasta Recipe

Italian Beef Pasta Recipe.
This delicious Italian beef pasta recipe recipe is great for kids, families and the budget! Oh yeah and it is so quick and easy too which is an added bonus.

Italian Beef Pasta Recipe

Ingredients
500g beef mince
1 onion, chopped
1 tomato, chopped
1 tsp curry powder
1.5 tbs mixed herbs
1/3 cup mixed vegetables
1 tin tomato soup
250g pasta (whichever you prefer)
Method
1.    Brown the mince in large saucepan. Add in the rest of the ingredients (except the pasta).
2.    Simmer gently until mince and vegetables are cooked through.
3.    While the mince is cooking, cook the pasta until just cooked. Drain.
4.    Serve mince mix over pasta.
You can add some cheese to finish it off or eat as it is.
